RIPE’s modest space still boasts a large kitchen. “When you believe in something good, well, it’s a great feeling to go to work,” owner Peter Kambitsis motions, “I pick out fish at the market, myself. When I cut a strip of fresh tuna, it looks just like Sushi. Everything is fresh and healthy, large portions. Many of my customers are fitness trainers.”
