Tortilla Republic Colors the Occasion With Unique Mexican Flair
Summer time is a busy time throughout the coast and Laguna Beach is one of those towns that have some interesting shops, art galleries and restaurants. Tequila Republic is one of four restaurants in their chain that exemplifies unique taste with Mexican cuisine that has a fusion of unique flavors.
It is one of those restaurants that has a modern rustic look, where they serve natural meats, organic and locally grown produce.
Their mission is to provide an atmosphere that is fun, yet serve Mexican classics with a touch of exciting essences. To understand just how exciting the flavors are, let us take a culinary journey to the Gulf of Mexico.
Beginning with the appetizers, there’s the Salsa trio, Guacamole and Ceviche. The Salsa trio is prepared with salsa de mesa salsa, de tomatillo and salsa de papaya habanero. Guacamole is a mixture of serrano pepper, tomatoes, white onions and cilantro with a touch of lime. The Ceviche has chilled oysters, marinated swordfish, shrimp, sliced cucumbers, avocado, cilantro, chipotle aioli and butter lettuce. All three appetizers are highly recommended.
Bret Lowers, a dynamic individual who is one of the assistant managers, was very knowledgeable in providing the right information and service for this occasion. The main entrees would include Ancho Seared Salmon, which is prepared with roasted poblano, onions, mango, herb infused lime. This is an excellent dish.
Another dish I would recommend is the Pollo Pimiento Rojo Asado. This is prepared with Mary’s free range chicken breast, sauteed kale, roasted pepper sauce with sweet potato fries.
For steak lovers, there’s the T.R Hamburguesa, which is the premium American wagyu beef with roasted poblano, caramelized onions, chipotle aioli, tomatoes, watercress, with sweet potato fries with cilantro and lime zest.
However, for a quick bite there are items such as the Baja Rock Shrimp taco with tequila battered rock shrimp and tequila passionfruit slaw.
Like so many foodies, desert is something we all enjoy. The Key lime pie and the churros with caramel and chocolate were my favorites.
