A Haven For Relaxation and Exciting Cuisine
Just 9.1 miles past Palm Springs, (Palm Springs Valley), is Rancho Mirage, where there are beautiful golf courses, casinos and the beautiful Triple A four star Westin Mission Hills Golf Resort and Spa. The resort is situated on 365 acres, and has 512 rooms, seven lighted tennis courts, a sixty foot waterslide, two championship golf courses and various dining options at Pinzimini.
On this occasion, the resort featured their Summer Wine Series, featuring Rodney Strong Wines with a pairing of world famous cuisine delights from Executive Chef Joel Delmond. Chef Delmond has traveled the world, from France, Switzerland, Egypt, Greece, Morocco and other countries.
“Of all the countries I’ve traveled, I enjoy Middle Eastern cuisine the best,” he says. That however does not change his creativity in presenting some beautifully prepared dishes. He is sensitive to the customer’s needs and purchases only the finest in locally grown vegetables, seafood and meats. The evening began with 1 Parade of Amuse Sauvignon Blanc, Chefs surprise and delight.
A spoon of well marinated black Angus beef and a Chicken tortilla and a glass of champagne set the evening. We then enjoyed a Northern Sonoma 2013 wine paired with Tuna Napoleon, cured Oliver, with white anchovy over Yukon wafer, virtual egg, with a Russian River Valley Pinot Noir 2013.
The virtual egg was quite unique in that the yoke was prepared with yellow tomatoes and mozzarella cheese with the outside egg white. The third course was a Whole Roasted Quail with toasted farro, Brentwood corn, Pluto, black garlic and speck vinaigrette, paired with Wine Symmetry Red Meritage 2012.

Chef Delmond, when asked how he handled stress, mentioned that he has his own beehive collection which keeps him busy, and so does their homegrown figs. In fact they have the Deglute Honey Beer available, which is one of the new beer items that locals and tourists enjoy.
As in any dining journey, the evening isn’t complete without a taste of something sweet. A four black Mission Fig Tart with Mascarpone, pistachio gelato, almond crumble, basil pop, and basil pop rock with a Gentlemen’s Port 2009, was the perfect way to end our culinary trip. In the interim I would suggest to enjoy the daily brunch buffet. It is a wonderful way to start off the morning.
