        Healthy Peppercorn & Maple Mustard
                  Crusted Tilapia
        ----------------------------------

    (serves 4)

    Ingredients:

    4 each 6-8 ounce fresh Tilapia filets
    1/2 tablespoon fresh chopped cilantro
    1/2 cup Log Cabin Lite or Sugar Free
     Syrup
    1/4 cup Dijon mustard
    1 tbsp grated horseradish (from jar)
    1/4 cup crushed peppercorn blend or
     butcher grind (coarse) black pepper
    1 teaspoon kosher salt
    1 fresh orange, quartered

    Directions:

    1) In a small bowl, mix cilantro, Log
     Cabin Lite or Sugar free, mustard and
     horseradish. Mix until smooth.
    2) Place tilapia filets in a greased
     baking pan. Brush all filets with
     prepared Maple mixture until thoroughly
     and evenly coated. Add a 1/4 cup of
     water to pan.
    3) Evenly sprinkle black pepper and salt
     over tilapia filets until evenly coated.
    4) Pre-heat oven to 350 F. Place tilapia
     in oven and bake for 20-25 minutes
     until flaky or internal temperature of
     150 F. Remove tilapia from oven.
     Transfer onto a serving dish over cous
     cous, wild rice or salad greens.
    5) Squeeze juice of each 1 orange quarter
     over each tilapia filet
