Recently, I was contacted by the Delaware Market House website which is a funky 100+ year old establishment that is in the heart of historic Gladwyne, PA and is owned by Chefs Kim and Edgar Alvarez - a nice Jewish gal and wonderful Guatemalan man who jokingly call themselves Kosher Salsa.

All joking aside they have a fabulous menu and have won dozens of awards from pubs ranging from Philadelphia magazine to Main Line Today. I asked if Chef Alvarez would be willing to share with us how he might prepare a Filet Mignon Steak. He said, "There's nothing quite like cutting into a buttery steak that has been cooked to perfection... served with fresh grilled asparagus, a side of fluffy mashed potatoes, and a glass of hearty red wine - I can't think of anything better to share with the ones I love. I hope you have the opportunity to taste this simple, elegant dish."

The Perfect Filet Mignon With Red Wine Reduction

What you'll need:

4 8oz filet steaks 3T. Olive oil 4 Shallots, sliced
Salt and pepper to taste 3/4c Red Wine
1/3c Peter luger steak sauce
Here's how:

1. Season steaks w salt and pepper.

2. Heat saute pan with 2T oil.

3. When pan is hot place filets in pan and sear on each side for 4 - 5 minutes.

4. Remove from pan and set aside.

5. Add 1T olive oil and saute shallots until golden brown.

6. Add red wine and reduce by half.

7. Add steak sauce and bring to a boil and reduce to a simmer for 2 minutes.

8. Place filets back in the sauce for 5- 7 minutes to finish cooking until Med rare, turning once to ensure even cooking.

9. Place filet on platter and sauce underneath.

10. Serve with homemade potato latkas.
