    Americans who eat junk food do, indeed, know better, but junk food eating is so deeply ingrained in the American way of life, we just can't let go.     Unlike other diet fads with a 95% rate of abandonment, low-carb diets have an 80% rate of retention. To date, of the 40 million Americans who have tried low-carb diets, 32 million report that they maintain low-carb lifestyles long after the target weight has been achieved. Going forward, this loyal population continues to spend 2.5 billion dollars a year on low-carb goods and services that allow them to maintain their low-carb lifestyles more easily.
