ICE Hosts 10 Best Pastry Chefs Awards
Peter Kump Inducted in Pastry Hall of Fame

On June 19, The Institute of Culinary
Education (ICE) hosted Pastry Art & Design and Chocolatier's Ten Best
Pastry Chefs in America Awards. The magazines honored pastry chefs from
around the country, including ICE alumna Nicole Kaplan, for their
contribution to the field and the creativity and talent they display in
their work. The 400 guests had the opportunity to taste this talent first
hand, as the 10 chefs offered one of their signature desserts in kitchens
throughout the school.
Pastry Art & Design and Chocolatier also inducted Peter Kump, ICE's
founder, in their Hall of Fame in recognition of his pioneering work for
culinary education around the country and his launching of the James Beard
Foundation in 1985.
Kaplan is the pastry chef at Eleven Madison Park in New York City. Other
New York recipients were Pastry Chefs Jean-François Bonnet (Tumbador
Chocolate), Will Goldfarb (Room 4 Dessert), Elizabeth Katz (BR Guest), Joe
Murphy (Jean-Georges Management), and Sebastien Rouxel (Per Se and Bouchon
Bakery). They were joined by John Kraus of the French Pastry School in
Chicago, Antony D. Osborne of Culinard, the Culinary Institute of Virginia
College in Birmingham, Alabama, Anil Rohira of Albert Uster Imports in
Gaithersburg, Maryland, and Sherry Yard of Spago in Beverly Hills,
California.
"The support that Pastry Art & Design shows for the industry it covers is
unparalleled," said ICE President Rick Smilow. "It is especially wonderful
to see at a time when American pastry chefs are showing incredible
creativity, and are more entrepreneurial than ever."
Pastry Art & Design is also a sponsor of the Center for Advanced Pastry
Studies (CAPS) at ICE, which was launched in 2005. CAPS brings some of the
world's top pastry experts to New York City, for classes for professional
pastry chefs that range from Advanced Sugar Artistry to Chocolate
Showpieces.
In addition to Kaplan, ICE alumni prominent in the pastry world include
Gina DePalma, pastry chef at Babbo and a multiple James Beard Award
nominee; Stephen Durfee, who won the 1998 James Beard Award for Outstanding
Pastry Chef while at the French Laundry; and Claudia Fleming, a Beard
recipient of the same award in 2000. All three are past Ten Best Pastry
Chefs Award recipients.
