Delightful ‘Everyday Cookies’ for Cold Season!

So it’s only taken me 5 months to get out the mess that is Ireland. I’m back, with gusto, pesto and Cookies and Cakes.

I’m repeatedly told cake and cookies can lead to obsession. This has and will forever be a hindrance for me, as I love my sweet things, far more than bacon or savory dishes. I’m in no way directly within passage towards this obsession, rather I’ve been raised on sweet treats. I’ve just the thing for everyone who might have missed me with this HUGE sweet treat for them with sweet teeth, like myself.

My everyday cookie is a must for mum’s on the go and need to make something quick and easy, while my 2 shades of cookie will be a instant hit with friends and family.

Lets dive in, my Everyday Cookie, albeit not always brought out in a rush, but more when ready cookie. I do have guests over and Family too so these homemade cookies are great.

As always feel free to double the portions should you need to to make more or if need start again if you don’t have the bowl.

Everyday Cookies.

Ingredients

100G Plain flour

100G Self raising flour

3/4 a full bar of unsalted butter

200g of sugar

2 tablespoons of Vanilla Extract (Love this smell)

2 Almond Essence or Extract (depending on pocket money

4 large (room temp) eggs

50g Vegetable oil

Instructions

Oven on 250c

-First get a bowl and add both the flours, and mix so even turned.

-If you’ve got pop-eye muscles you could hand mix this, OR you can use a machine, either way its up to you add the oil.

-Extracts sugar and butter and mix until smooth. If you do this by hand just ensure you have no chunks of butter, especially if you just took it out the fridge. Combine both mixes until you have a heavenly scented aroma and a mixture that is no doubt sticking to the edges.

Depending on mouths you’re feeding, assign to sizes on a backing sheet in to the pre-heated oven at 250C.

-Cook for 14 minutes, careful not to burn them.

-Take out to leave on the tray then move to a wire rack to cool down. Do this over and over until you have either no batter left (or if like me ate half the raw mix).

– Sprinkle once cold with icing sugar or if you’re having a treat apply some cherry jam and put your feet up!

Same But Different

On to my 2 shades of Biscuit mix.

Now this technique is very similar to the one above however we’re doing this like marble cake. So instead once you have The above batter, split in to two bowls, apply Coco powder or food coloring to change from cream colored mixture to anything you want and again you could change the original. My favorite is Chocolate and vanilla split. So with your zany mix’s return to the oven and take a teaspoon of one bowl and a teaspoon of the other bowl.
